You need to make sure you still get all the necessary components in your diet that your body needs to make complete proteins. A good way to do this is to eat black beans with brown rice. Soaking the beans for two days before cooking usually improves the flavor, if you have the time to do so. Salt and garlic should do fine for the seasoning.
...Also, for quick meals, you may want to check an asian market if you can. They usually have a good selection of vegetarian instant noodles--no meat flavoring or any of that.
I find that for snacks, fruit is usually fine.
And also, remember, it's not nearly as hard once you remember that cheese pizza is still fair game. ^_^
And I will definently check an Asian market.
